DailyCandy Interviews Gaslight Coffee Roasters Owners Tristan Coulter and Zak Rye

DailyCandy: The space looks great. Loving the patterned wallpaper, exposed brick, white pine floors, and vintage lanterns. The taxidermy’s a nice touch.

Tristan: We gutted this place ourselves. Things are particularly crazy because Zak just got married. I got married two months ago.

Zak: We should’ve just married each other.

DC: [looks terrified]

T: We’re too excited to stress. We’ve got a communal roasting facility in back. Wormhole’s using it, too. We’re not snooty baristas.

Z: We’ll do whatever customers want: pour over, siphon, cowboy coffee. You want a shot of espresso in a bowl of soup? Done.

T: We’re making syrups in-house. We’ll serve La Boulangerie pastries, Marion Street cheese, Smoking Goose charcuterie, and breakfast bentos with a duck egg, fruit, and bread.

DC: This place is going to be a hit. Do you agree?

T + Z: We do.
